Peaches & Cream Dessert

The hubs birthday is coming up soon and we celebrated a little early. Instead of the traditional birthday cake I made his favorite dessert.

This is a recipe from my mom. My family has a great line of bakers and lucky for me I have a big sweet tooth myself and got to enjoy many of these desserts.

We call it Peaches and Cream but most would say it's a peach crisp. Don't be fooled by the peaches either, it's not something you want to consume when watching your figure.

This is a 4 layer process. Start with your flour, baking soda, vanilla pudding (make sure it's not instant), eggs and milk. Mix together until smooth and spread into 13 x 9 greased dish.

Layer the peaches on top reserving some of the juice for later. You can use any fruit you'd like but we prefer peaches.

I softened the cream cheese and then used my mixer to combine the cream cheese, sugar and reserved peach juice.

Spread on top trying to avoid the edges (I didn't do a good job on that one but that's ok)

The crumb layer is optional but I highly recommend. Work the flour and sugar into the butter and spread on top. Bake for 50-60min at 350 degrees. Allow to cool a little and it can be served warm or cold.

Try not to eat it all...

Recipe:

Preheat oven to 350 degrees
Grease 9 x 13 baking dish

1 1/2 cups flour
2 small packages of vanilla pudding (not instant)
2 tsp baking powder
6 tbls butter softened
2 eggs
1 cup milk

Mix all ingredients together and spread into greased pan

2 -15 oz can of peaches

Drain and reserve juice. Spread peaches on first layer.

2-8 oz packages of cream cheese softened
1 cup sugar
6 tbls peach juice

Mix together and spread on top of peaches trying to avoid the edges

Crumbs

1 cup flour
1/2 cup sugar
1/3 cup butter softened

Work butter into dry ingredients to create a crumb mixture. Spread on top and bake for 50-60 minutes at 350 degrees.

Enjoy!
